LASAGNA SOUP

Sometimes viral recipes can be pretty bad…

And I typically have no real interest in them at all.

But then there are some viral recipes that I watch and I’m like …yup, let’s do it and the viral lasagna soup recipe was one of them. I watched a couple videos and they all basically had the same ingredients but you know me, I need to add some other fabulous things. For one, double cream ricotta cheese! When I was picking out ricotta cheese, I was just like we love rich things and double cream ricotta just screams rich. For the meat I used my go to ground turkey + sausage. I love using ground turkey with a slightly higher fat content so it stays moist through out the cooking process and never dries out like lean ground turkey tends to do.  I like that this is a one pot meal and comes together quicker than actually making a pan of lasagna. It's great for a weekend cozy stay indoors dinner + also one of those meals you can make during the week and have for lunch the next day. 

 

Notes:

-Use your desired fresh ground meat + fresh raw sausage; just make sure it’s an even pound for pound ratio i.e - a pound of raw ground meat + a pound of Italian sausage

-If you're vegetarian, this can be made with root vegetables instead of ground meat. I suggest roasting the root vegetables prior to adding them to the soup for more flavor. 

- Remember pasta swells so make sure you have enough liquid for a soup like consistency while also having enough liquid to cook the lasagna noodles.

 

 FAB RECIPE: LASAGNA SOUP 

your preferred fresh ground meat + fresh raw Italian sausage, casing removed

1 large onion, diced

5 garlic cloves, peeled and sliced

2 large cans tomato purée

2 small cans diced tomatoes

broth of your choice, about 4 cups

1 box lasagna noodles, broken into pieces

your preferred lasagna seasonings (use whatever you would ordinarily season your lasagna with)

1c. half & half, so optional

1 container of ricotta cheese, double cream if you're bougie ! 

Shaved parmesan, however much you want

1/2 block of mozzarella cheese, shredded

Lemon zest + juice

Parsley, washed dried and chopped

Seasoning salt

Pepper

Olive oil

Splash of milk, optional

 

In a large pot over medium heat sauté the onions and garlic in a few teaspoons of oil. Once the onions are soft, add in your ground meat + sausage, season with salt & pepper and cook for about 8 minutes. When the meat is crumbled and cooked half way through, spoon into a bowl and set aside. Next add tomatoes and broth to the pot and bring to a simmer. Once simmering, add back in the cooked ground meat , lasagna pieces and your desired lasagna seasonings. Stir and bring to a simmer until lasagna noodles are cooked and becomes al dente. Adjust liquid with extra broth if the soup becomes to thick and add in half & half, if using. 

 In a separate bowl combine the ricotta, shaved parmesan, shredded mozzarella cheese, parsley, and a few drops of olive oil. If ricotta is too thick, add in a few drops of milk. Season to your taste with seasoning salt, pepper and the lemon zest and juice. 

 Once the soup is seasoned to your liking, spoon into a bowl and top with the ricotta mixture. Garnish with additional shaved parm and olive oil and eat fabulously !
